Vera's Baked Beans

Grabbed this recipe, and changed it little enough that I thought it appropriate to keep the name.

Ingredients:
  • 1 lb. lean ground beef   
  • 1 lb. bacon   
  • 1 large yellow onion, diced
  • 1 small green pepper; diced
  • 1/2 cup brown sugar
  • 1/2 cup catsup
  • 16 oz. Thai Chili Sauce (I use the sweet chili sauce)
  • 2 Tbs. prepared mustard
  • 1 lb. pre-cooked ham; cubed
  • (4) 15 oz. cans pork and beans

Preparation:
Heat a 12" Dutch oven using 18-20 briquettes bottom until oven is hot. Cut bacon into 1/2 inch pieces and add to dutch oven. Cook until just getting crisp. Add ground beef and cook until brown. If there is excess grease, you can remove it. Using lean ground beef, even with the bacon, there hasn't been enough grease for me to remove.

Add onions and green pepper and saute until onions are translucent. Reduce briquettes on bottom to 12-14. Add brown sugar, catsup, chili sauce, and mustard. Simmer for 15 minutes. Add ham and beans. Cover and add approximately 15 briquettes to the lid. Simmer for 2 hours stirring every 15 minutes.

From there, you can remove from the heat, or cook longer - the longer you cook, the thicker the beans will get.
There are two rules of Dutch Oven Cooking:
1) If you cook too much food, share.
2) Cook too much food.

Don't be fooled by the fact that this is filed under "Side Dishes."  It's a VERY VERY hearty side dish.
